I just wanted to add that traditionally, the straw dummies used in Tamashigiri were made of soaked and cured rice straw, wrapped around bamboo. The straw gets to a point where the force required to cut through it is about the same as flesh. This would be wrapped around bamboo, which simulates bone. Thus, you could gauge the effectiveness of a blade without having to carve up some poor peasant or convict.
